Cattleman’s Cutlets are cut from the 10th to 13th rib of a cow. They have a small amount of rib bone left on them. The meat on that rib is known as the top of the Scotch Fillet & the end of the T-Bone. The Cattleman’s cut is rich in flavour and best cooked on the BBQ or in a hot pan. It’s a bone-In steak that is easier to cook than a Tomahawk & might be a good thing to try cooking well before tackling a full Tomahawk.
